Method

  1. Shape the patties

Divide the mince into four portions and gently shape into patties about 10 cm wide and 2 cm thick; make a shallow dent in each centre and chill for 10 minutes.

  2. Toast the buns

Spread the cut sides of the buns with butter and toast cut-side down in a dry pan over medium heat for 1 to 2 minutes, until golden; set aside and wipe the pan clean.

  3. Mix the sauce

Stir the mayonnaise, ketchup and mustard together in a small bowl for 1 minute, until evenly combined.

  4. Season the patties

Season both sides of each patty evenly with the salt and pepper just before cooking.

  5. Heat the pan

Set the wiped pan over medium-high heat for 1 to 2 minutes, until hot, then add the oil and heat for 30 seconds until shimmering.

  6. Cook the patties

Cook the patties in batches if needed, without crowding, for about 5 to 8 minutes total over medium-high heat, turning once. Check the centre with a thermometer and cook minced beef to 71°C (160°F).

  7. Melt the cheese

When the patties are nearly cooked, place a slice of cheese on each and cover the pan over medium heat for 1 to 2 minutes, until the cheese melts and the beef reaches 71°C (160°F).

  8. Assemble the burgers

Spread sauce on the toasted buns, add lettuce, tomato, patties and pickles, then close the buns and serve immediately.

Tips

  • Cook in batches if the patties would touch or crowd the pan, allowing the pan to regain heat between batches.
  • Shape patties to match the bun width, as they shrink slightly during cooking.
  • Keep the patties cold until cooking and avoid pressing them with a spatula, which can squeeze out juices.

Swaps

  • Use another good-melting cheese in place of cheddar or American-style cheese.
  • Use pickle brine instead of mustard, or add a teaspoon of finely chopped pickles to the sauce.

Storing

Refrigerate cooked patties and burger components separately in airtight containers for up to 3 days. Reheat patties in a covered pan over medium-low heat until steaming hot throughout, then assemble.
